I Sabor will win, but only because we are using the animated versions of the characters. In the animated version, Shere Khan was kinda like Count Dooku, he liked to verbally toy with his victims and then kill, Sabor was like Maul, kill first talk later. As brought up by many in the comments, Sabor was able to take down Kercheck who is a fully grown (abet slightly larger) Eastern Mountain Gorilla male. Males can weight anywhere from 309-453 lbs, compared to sabors weight of 62-132 lbs. Shere Khan may be larger, but size matters not to Sabor. Sabor, being a leopard, is more agile and is a better climber than Shere Khan, which might give her an advantage given this fight will likely take place in the jungle, and Sabor is a better stealth hunter than Khan. The one way Shere Khan would be able to win this fight is to use his size and strength to any advantage he can find, maybe try to injure Sabor so she isn't as agile or just try to fight like her
